carrot cake
For a 15 cm cake, about 1 kg:

For countertop: 
  • 2 eggs
  • 100 gr brown sugar
  • 1 egg white
  • 70 gr oil
  • 100 gr flour
  • 80 gr groud nuts
  • 5 gr cinnamon
  • a teaspoon of baking powder
  • 200 gr groud carrots

Mix the sugar and eggs until you get a light foam and then add the oil and mix a little more. Add flour, nuts, cinnamon, baking powder and carrots and stir a little until all ingredients are incorporated.

Divide the top into 3 shapes 15 cm in diameter and bake at 150 C, heat up and down

For de cream:

  • 100 gr soft butter
  • 1/2 teaspoon of vanilla extract
  • 70 gr powdered sugar
  • 250 gr Mascarpone chese

Mix the ingredients until the butter foams and lightens in color. Add the cream cheese and mix until it blends into the butter.

After the tops are ready, take them out of the oven and leave them to cool for about 30 minutes. Fill the cake using about 100g of cream on each layer and the rest for the edges and on top.

We leave it in the fridge for at least 2 hours and it is ready to serve.
